Serial dilutions of twenty-three amino acids were presented to young and elderly subjects who rated the relative intensities of the dilutions using the magnitude estimation procedure, and no conclusive relationships between the slopes of the psychophysical functions were found with chemical structure, taste quality, or solubility.

The present article shows that arguments used to support the concept of four tastes are equivocal and it is suggested that the data are more consistent with the hypothesis that gustatory data have a more continuous organization which includes the familial primary four.
